Remember kids, those are Celsius temps! In Fahrenheit it would be like 325 vs 375. If you cook anything in oil at 160 or even 190 F, it is guaranteed to be soggy and limp.

  ...and if you're using the Kelvin scale (which starts at absolute zero), those numbers would be 433 and 463.
